Executive Chef of Christophe Harbour Barnaby Jones shares his passion for local, Caribbean food and will demonstrate how to source and create the classic dish; Ackee and saltfish. The workshop will begin with a trip to the local farm where attendees can pick ingredients and discuss the unique foods and flavours available on the island. These ingredients will then be taken back to the beautiful owner’s Pavilion restaurant and used to create this authentic breakfast classic in the open kitchen. Keen to discuss the history, unique flavours and culture that make up the Caribbean kitchen, Barnaby will enthusiastically field any questions you may have.
