Colin, a third generation Scottish butcher manages our Provisions department since the beginning and is dedicated to sourcing the finest products for our chefs!

He is member of the British Institute of Meat and has an in-depth knowledge of the latest tendencies in the production of the meat, which is imported directly from source in Ireland, England and Australia.

He is also dedicated to bring fresh fruits, vegetables and seafood from local wholesale markets to ensure quality, freshness and value.
